Creamy Turkey Courgetti

After a full festive period, food can sit quite heavily on the stomach, The Creamy Turkey Courgetti is low in Carbs (and is Low GI) as well as low in Calories and perfect for those of you who love those creamy sauces. It will keep you full without with-out making you feel sluggish.

 

  • Left-over Turkey
  • 1 Garlic Clove (or garlic puree)
  • 1 Onion, finely chopped
  • 1 chicken stock cube
  • 125ml water
  • 175ml milk
  • 300ml full fat Crème Fraise
  • Mushrooms (optional)
  • A bunch spring onions, chopped roughly
  • 1 courgette per person
  1. Put onions with a little oil and fry for 5 mins
  2. Crumble stock cube over onions with 125ml;  bring to the boil and simmer for 10 mins until the liquid has reduced
  3. Add crème fraise, milk, left-over Turkey, mushrooms, salt and pepper; boil again for around 10 minutes until the sauce has thickened
  4. Spiralise the courgette (we recommend tagliatelle sized) and fry spiralized courgette in a pan for 5 mins
  5. Serve courgette with the sauce!
