6 things to do with Turkey leftovers...

Turkey Bulgar Wheat

Turkey Bulgar wheat is as warming as a winter risotto but will keep you feeling fuller for longer. Bulgar wheat is low GI and this recipe is also low calories, so that winter warm feel without piling on the pounds. This recipe should also take you less than 30 mins to fully prepare - enjoy!

  • 50-75g Bulgar wheat per person
  • Water
  • Chicken Stock cube
  • Onion (1/4 pp chopped)
  • Mushrooms (handful pp, chopped)
  • Left-over Turkey
  • Spring onion (2 pp)
  • Spinach (1-2 handfuls pp)
  • Chilli’s (to taste)

 

  1.  Boil Bulgar wheat in a pot with stock cube(s) and water (cover the bulgar wheat and keep topping up so that water is evaporated by the time the bulgar wheat is cooked (approximately 10 minutes)
  2. In a wok, fry off the onion for 1-2 minutes
  3. Cut the left-over turkey into small chunks and put into the wok with the mushrooms and chilli’s – fry off for a couple of minutes
  4. Add cooked Bulgar wheat into the wok and mix
  5. Throw in the spinach until wilted and mix through; add the spring onions (roughly chopped)
  6. Serve!
